Spotlight Shines on Green City Market Regular Jake Potashnick of Feld Restaurant

It already sounded like Chicago's Green City Market had a hit on their hands when they announced that Chef Jake Potashnick of Michelin-starred Feld restaurant would lead a tour of the flagship Lincoln Park market and a "seasonal breakfast experience" on the morning of Saturday, June 27.

I don't know if my Green City friends are psychic, but that event just went up a few notches on the coolness scale yesterday (June 15) when Jake was announced the winner of the 2026 James Beard Foundation Award for Best Chef Great Lakes. Jake finished atop a strong field of four other finalists, including fellow Chicagoan Norman Fenton of Cariño.

Jake frequents Green City Market to shop for super-fresh ingredients produced by Chicago region farmers. But he eschews the term "farm to table" for "relationship to table," which also is the formal title of the June 27 event. Green City Market explains:

"Inspired by Jake’s 'relationship-to-table' philosophy, this guided experience invites guests behind the scenes of Green City Market to meet the farmers, growers, and producers whose work directly influences some of Chicago’s most celebrated kitchens. Rather than simply focusing on what arrives on the plate, Relationship to Table highlights the people, stories, and partnerships behind the food itself.... Jake describes Feld not as a farm-to-table restaurant, but as a “relationship-to-table” restaurant, centered on building meaningful connections with farmers, ranchers, fishers, and producers throughout the Midwest."

The priority Jake gives to fresh seasonal ingredients greatly influences Feld's prix fixe only tasting menu, which changes every day.

Congratulations to Jake Potashnick for the high honor he has received. I'm certain his Green City tour and breakfast will be memorable for attendees.
