Glazik Family's Dedication to Sustainability Highlighted in Crop and Distillery Tour

There are now many farmers who employ regenerative practices to advance soil health and better-for-people-and-the-planet agriculture. There are distillers and brewers who use organic grain in their beverages.
The Glazik family of Paxton in east-central Illinois is among the few producers anywhere who do both: growing grain regeneratively at their Cow Creek Farm, and utilizing their yield to produce organic spirits and brews at their Silver Tree Beer and Spirits.
You can see how this all comes together by joining them on the Organic Seed to Spirits Field Day scheduled for Friday, July 24 from 10:30 a.m. to 5 p.m. in Paxton (located about 25 miles north of Champaign and 115 miles south of downtown Chicago).
I attended this event last August and enjoyed it so much that I'm making the return trip on the 24th. And there is a bonus perk for those of us in the Chicago area: There will be a shuttle to the event from the Amtrak station in Rantoul, Illinois. (Really affordable... Train tickets are priced as low as $20 each way, and I've often spent more than that on Uber rides here in Chicago.)
Here is how the five partnering organizations describe the event:
Join OGRAIN, Artisan Grain Collaborative, The Land Connection, IDEA Farm Network, Mad Agriculture, and Rodale Institute for this unique field day tailored for both farmers and distillers to learn in the field and at the distillery.
We’ll spend the morning touring organic fields and seeing a small grain cleaning demonstration with Will and Dallas Glazik at Cow Creek Organic Farm. We’ll transition inside for lunch featuring a grain chain panel and delicious, local food from Maize.
The afternoon will include a Silver Tree Spirits distillery tour, a buyer-seller mixer, grain quality discussion, and an optional educational spirit tasting, offering participants a hands-on opportunity to understand how environment influences flavor outcomes in distilled products.

This event is for organic farmers, those who are curious about organic production or the distilling market, organic grain buyers, and grain product makers.
